Recently while in Colombia, I learned even more about this amazing sweetener.
Panela is different than any other “raw sugar” on the market because it is NON CENTRIFUGAL, meaning it’s genuinely not processed and is completely unrefined. All of the nutritional and mineral rich molasses, unlike other types of sugar, is kept in tact.
Other names for Panela are Gula Melaka and Jaggery.
It has been used in Central & South America traditionally for many purposes, both for healing and for mixing with their drinking chocolate (or in our case, kakao AND healing are the same thing ;))
My panela partner in Colombia was telling me that many people who are diabetic tell him all the time how this is the ONE sweetener they can use that doesn’t spike their blood sugar levels.
Intuitively I already felt this in my own body for years, but it was great to hear it from people that are actually monitoring their exact blood sugar levels daily.
Recently there was a big study done by the Department of Nutrition, Faculty of Medicine and Health Science at the University Putra Malaysia, on non centrifugal panela. Some of my favorite quotes in the study include:

“In vitro studies revealed that NCS could remove free radicals.”
